Delicious Greek-inspired stuffed peppers with flavorful lamb, rice, and feta cheese filling, topped with tomato sauce.
Ingredients:
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 6 medium green bell peppers
  • 0.75 teaspoon salt
  • 0.5 teaspoon ground allspice
  • 1 cup cooked rice
  • 8 ounces ground lamb
  • 1 cup crumbled feta cheese
  • 1 cup tomato sauce
  • 1 cup cold water
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon white sugar
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • In a medium skillet over medium heat, sauté onions in oil until soft for about four minutes. Add garlic and cook for an additional minute.
  • Slice the tops off the peppers and remove the seeds. Place the peppers upright in a 9x12-inch baking dish.
  • Combine onion mixture, dill, salt, allspice, pepper, rice, lamb, and feta cheese in a large bowl. Stuff peppers with the mixture.
  • Combine the tomato sauce, water, lemon juice, and sugar for a zesty kick. Drizzle half the mixture over the peppers and the remaining half over the bottom of the dish. Seal it all in with foil for delicious results.
  • Bake in the preheated oven for 45 minutes, then uncover and bake for an additional 15 minutes, basting with sauce occasionally, until a meat thermometer inserted in the center of the filling reads 160°F (70°C).
