Impress your guests with these flavorful Italian-inspired stuffed mushrooms. Prep ahead by filling with green onion, bell pepper, bread crumbs, and Italian seasoning for a crowd-pleasing appetizer that's easy to make and store until party time.
Ingredients:
  • 36 medium whole fresh mushrooms (1 pound)
  • 2 tablespoons butter or margarine
  • 1/4 cup chopped green onion (3 medium)
  • 1/4 cup chopped red bell pepper
  • 1 1/2 cups soft bread crumbs
  • 2 teaspoons Italian seasoning
  • 1/4 teaspoon pepper
  • 1 tablespoon butter or margarine
  • Grated Parmesan cheese, if desired
Instructions:
  • Preheat oven to 350°F.
  • Twist and remove mushroom stems from caps. Finely chop enough stems to measure 1/3 cup. Set aside mushroom caps.
  • In a 10-inch skillet over medium-high heat, melt 2 tablespoons of butter until sizzling. Sauté chopped mushroom stems, onions, and bell pepper until onions are softened, about 3 minutes. Remove skillet from heat and mix in bread crumbs, Italian seasoning, salt, and pepper. Stuff mushroom caps with the flavorful bread crumb mixture.
  • In the oven, melt 1 tablespoon of butter in a 13x9x2 inch rectangular pan. Arrange mushrooms in the pan, filled sides up, and sprinkle with cheese. Bake for 15 minutes.
  • Preheat oven to Broil. Broil mushrooms with tops positioned 3 to 4 inches from heat for about 2 minutes, or until tops are lightly browned. Serve immediately while hot.
