Flavorful Italian vegetarian stuffed mushrooms - a crowd-pleasing appetizer for any gathering.
Ingredients:
  • 12 medium mushrooms
  • 2 tablespoons olive oil, divided, or more as needed
  • 0.25 cup chopped red onion
  • 3 cloves garlic, chopped
  • 1 tablespoon Italian seasoning
  • 0.25 cup crushed saltine crackers
  • 2 tablespoons grated Asiago cheese
  • 1 tablespoon ricotta cheese
Instructions:
  • Preheat your oven to 400°F (200°C) and grease a baking sheet.
  • Separate mushroom stems and finely dice. Gently coat caps with 1 tablespoon of olive oil and arrange them on a baking sheet, gill side facing up.
  • In a skillet over medium heat, warm up the remaining 1 tablespoon of oil. Sauté onion, garlic, and Italian seasoning for 2 minutes. Add mushroom stems and cook until tender for about 5 minutes. Transfer to a bowl once done cooking.
  • Combine crushed saltines, Asiago cheese, and ricotta cheese with the onion-mushroom mixture. Season with salt and pepper. Fill each mushroom cap with a spoonful of the mixture.
  • Bake in the hot oven until mushrooms are tender and filling is slightly bubbling, for 20 to 25 minutes.
