Cheesy stuffed jumbo shells baked in savory marinara sauce with green peppers, mushrooms, onions, and mini pepperoni slices for a delicious pizza-inspired meal.
Ingredients:
  • 2 (28 ounce) cans crushed tomatoes
  • 2 tablespoons canola oil
  • 2 tablespoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon white sugar
  • 1 (12 ounce) box jumbo pasta shells
  • 1 (6 ounce) can sliced mushrooms, drained
  • 0.5 green bell pepper, chopped
  • 2 cups shredded Monterey Jack cheese
  • 1 (6 ounce) package of sliced mini pepperoni
Instructions:
  • In a large saucepan, combine crushed tomatoes, canola oil, oregano, basil, and sugar. Cover and bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, until flavors meld, about 30 minutes.
  • Preheat your oven to 350°F (175°C) for perfectly baked results.
  • 1. Fill a large pot with salted water and bring it to a vigorous boil. Add the shell pasta and cook uncovered, stirring occasionally, until al dente, about 10 minutes. Drain well.
  • In a bowl, combine the mushrooms, green pepper, and onion. Fill each shell with 1 teaspoon of tomato sauce, then add the mushroom, green pepper, and onion mixture. Top each shell with 1 tablespoon of Monterey Jack cheese. Arrange the stuffed shells side by side in a 9x13-inch baking dish, placing mini pepperoni slices on top of each shell. Carefully pour the remaining tomato sauce around the shells.
  • Bake until the cheese is gooey and golden and the pepperoni slices are crunchy, for around 30 minutes in the preheated oven.
