Pizza Stuffed Shells

Cheesy pepperoni-stuffed jumbo pasta shells with pizza sauce - a quick and comforting dinner ready in an hour!
Ingredients:
  • 12 uncooked jumbo pasta shells
  • 1 tablespoon oil
  • 1 cup chopped green bell pepper
  • 1 medium onion, chopped (1/2 cup)
  • 1 1/2 cups chopped pepperoni (about 6 ounces)
  • 1 cup chopped Italian plum tomatoes (about 3 medium)
  • 8 oz. (2 cups) shredded 6-cheese Italian cheese blend
  • 1 (15-oz.) can pizza sauce
Instructions:
  • Cook pasta shells according to package instructions until they reach your desired doneness. Drain the cooked pasta. Preheat the oven to 350°F and spray an 11x7-inch (2-quart) glass baking dish with nonstick cooking spray.
  • In a large skillet, heat oil over medium heat until sizzling. Sauté bell pepper and onion until tender, about 3-4 minutes. Remove from heat and stir in pepperoni, tomatoes, and 1 1/2 cups of cheese until well combined.
  • Stuff each cooked pasta shell with the delicious pepperoni mixture, ensuring they are all evenly filled. Arrange the stuffed shells in a greased baking dish, spooning any extra pepperoni mixture between them. Generously ladle pizza sauce over the top of the stuffed shells and cover the dish with foil. Time to bake and enjoy!
  • Bake at 350°F for 30 minutes. Sprinkle with remaining 1/2 cup cheese, uncover, then bake for an extra 5 to 10 minutes until the sauce is bubbly and the cheese is melted.
