Pizza-filled pasta shells

Create a kid-approved delightful pasta dish with a clever twist.
Ingredients:
  • 1/2 x 500g packet large dried pasta shells
  • 1 large brown onion, chopped
  • 175g shortcut bacon rasher
  • 1 large red capsicum, chopped
  • 100g small cap mushrooms, sliced
  • 400g can diced tomatoes
  • 165.00 ml reduced-fat grated pizza cheese
  • Salad leaves, to serve
Instructions:
  • Preheat your oven to 200°C/ 180°C fan-forced. Grease an 8 cup-capacity baking dish. Boil pasta in salted water according to package instructions until tender. Drain well.
  • Heat a nonstick pan over medium heat. Cook onion and bacon for 3 minutes until onion softens. Add capsicum and mushroom, cook for 3 more minutes until veggies are tender. Stir in tomato and then remove from heat.
  • Preheat the grill to high heat. Gently fill each pasta shell with 1 tablespoon of the vegetable mixture. Place the shells, open side up, in the dish and sprinkle cheese on top of the fillings.
  • Grill until the cheese is golden and melted, about 3 minutes. Serve alongside fresh salad leaves.
