Delectable Chicago-style stuffed pizza filled with cheese, sausage, pepperoni, and veggies - a must-try!
Ingredients:
  • 2 teaspoons white sugar
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 1 teaspoon active dry yeast
  • 3 cups unbleached all-purpose flour, divided
  • 0.5 cup warm water (110 degrees F/45 degrees C)
  • 0.5 cup yellow cornmeal
  • 1.5 teaspoons salt
  • 2 tablespoons olive oil
  • 0.25 pound spicy Italian sausage - browned, drained and crumbled
  • 9 ounces shredded mozzarella cheese
  • 0.25 cup grated Parmesan cheese
  • 0.33333334326744 cup diced pepperoni
  • 0.25 cup chopped onion
  • 0.125 cup chopped green bell pepper
  • 1 teaspoon dried oregano
  • 3 cloves garlic, sliced
  • 0.5 cup tomato sauce
Instructions:
  • Prepare the dough by dissolving sugar in 1 cup of warm water in a small bowl. In another small bowl, mix yeast, 1/2 cup flour, and 1/2 cup warm water. Combine the mixtures and allow it to rest in the bowl for approximately 20 minutes until it becomes foamy.
  • Combine 2 1/2 cups flour, cornmeal, and salt in a medium bowl. Take out half of the mixture and stir in 1 cup sugar water. Once combined, add back the rest of the flour/cornmeal mixture and mix well. Incorporate the yeast mixture. Knead the dough on a floured surface for 8 to 12 minutes until smooth. Transfer the dough to a lightly oiled bowl, cover with plastic wrap, and let it rise until doubled in volume.
  • Preheat your oven to 450 degrees F (230 degrees C). Combine sausage, mozzarella cheese, Parmesan cheese, pepperoni, onion, bell pepper, oregano, and garlic in a large bowl. Mix thoroughly.
  • Take half of the dough and press it into a lightly greased deep dish pan to form the bottom and sides. Bake the crust in a preheated oven for 4 minutes. Next, add the stuffing mixture on top of the bottom crust, cover it with the remaining dough, seal the edges together with your fingers, and trim any excess dough. Make slits on the top crust to allow steam to escape during baking, then finish by topping it with tomato sauce.
  • Bake at 450 degrees F (230 degrees C) on the lower rack for 45 minutes, or until the crust turns golden brown. Let it cool for 5 minutes, then slice and enjoy.
