Chicago-style tavern pizza: Thin, crispy crust with endless topping options for a delicious, easy-to-make meal.
Ingredients:
  • Dough:
  • 1 1/4 cups all-purpose flour, plus more for work surface
  • 1 teaspoon granulated sugar
  • 3/4 teaspoon instant yeast
  • 1/2 teaspoon kosher salt
  • 1/4 cup plus 3 tablespoons cold water
  • 1 tablespoon extra-virgin olive oil, plus more for work surface
  • Cornmeal, for dusting
  • Toppings:
  • 1/2 cup jarred marinara sauce, divided (such as Rao’s)
  • 1 cup (4 ounces) shredded low-moisture mozzarella cheese
  • 1/4 cup drained and sliced pepperoncini salad peppers, or to taste
  • 12 pepperoni slices, or to taste
  • 1/2 jalapeño chile pepper, unseeded and thinly sliced
  • hot honey, for drizzling
  • coarsely chopped fresh basil
Instructions:
  • In a food processor, blend flour, sugar, yeast, and salt for about 3 seconds until combined. While the processor is on, gradually add cold water and oil through the chute until dough forms a sticky ball that pulls away from the sides of the bowl, which should take about 45 seconds to 1 minute.
  • Oil work surface lightly and place dough ball on top; knead until smooth for about 1 minute. Shape the dough into a tight ball and put it in a large bowl greased with oil. Cover the bowl with plastic wrap and let the dough rise at room temperature until it almost doubles in size, for 1 hour and 30 minutes to 2 hours.
  • Preheat your oven to a piping hot 500 degrees F (260 degrees C) and place a pizza stone on the lowest rack.
  • Place the dough on a floured surface and reshape it into a ball. Sprinkle a bit of flour over the dough ball and flatten it into an 8-inch disk with your fingertips. Roll out the dough using a rolling pin until it forms a 12-inch circle, dusting with flour as needed.
  • Sprinkle cornmeal on a pizza peel and place the dough circle on top. Evenly spread marinara sauce on the dough, leaving a small border. Top with mozzarella, pepperoncini, pepperoni slices, and sliced jalapeño.
  • Gently move the pizza onto the hot pizza stone in the oven and bake for approximately 10 minutes, or until the edges turn golden brown and the cheese is melted.
  • Take out of the oven and generously drizzle with warm honey before sprinkling with fresh basil leaves.
