Colonial-inspired olive balls - a crowd-pleasing party favorite from a Virginia tavern, perfect for any gathering!
Ingredients:
  • 18.5 ounces extra sharp Cheddar cheese, shredded
  • 0.5 cup butter, softened
  • 0.5 teaspoon paprika
  • 1.5 cups all-purpose flour
  • 45 pitted green olives
Instructions:
  • Bring the cheese to room temperature before proceeding.
  • Preheat the oven to a toasty 375°F (190°C).
  • Combine cheese, butter, and paprika in a large bowl using a pastry blender. Gradually incorporate flour with the pastry blender until a solid, smooth dough forms. Use your hands to finish, shaping the dough into a crumbly ball. Add more shredded cheese if needed for moisture.
  • Take a small piece of dough and wrap it around an olive, rolling gently between your palms to seal. Place on an ungreased cookie sheet. Repeat with remaining dough and olives. Chill in the refrigerator for about 10 minutes to firm up.
  • Bake in the preheated oven for 20-25 minutes until golden brown. Serve warm or at room temperature.
