Chicago-style hot dog inspired salmon with pickles, onions, tomatoes, and sport peppers.
Ingredients:
  • cooking spray
  • 4 (6 ounce) salmon fillets
  • 0.25 lemon, juiced, or more to taste
  • 2 teaspoons dried dill weed
  • 0.25 cup Dijon mustard
  • 2 large dill pickles, diced
  • 0.5 white onion, diced
  • 1 tomato, seeded and diced
  • 4 sport peppers, chopped, or to taste
  • 1 dash celery seed, or to taste
Instructions:
  • Heat your oven to a piping hot 400 degrees F (200 degrees C).
  • Prepare the aluminum foil by greasing four 6x6-inch pieces with cooking spray and place the salmon fillets on top.
  • Drizzle lemon juice over the salmon fillets and sprinkle 1/2 teaspoon of dill weed on each. Spread 1 tablespoon of mustard on top of each fillet, then add a dill pickle slice and onion. Wrap the salmon in aluminum foil, sealing the edges, and place the packets on a baking sheet.
  • Cook the dish in the oven until the fish easily flakes with a fork, approximately 15 minutes.
  • Gently place the packets in shallow bowls and carefully open them using heatproof gloves. Sprinkle diced tomatoes and sport peppers on top, then season with celery seed.
