Try Chef John's irresistible Chicago deep-dish pizza muffins with a golden crust and a delicious, handheld meaty, cheesy, and saucy filling.
Ingredients:
  • 2 teaspoons olive oil
  • 1 (16 ounce) package cold, prepared pizza dough
  • 4 ounces provolone cheese, diced
  • 0.75 cup cooked, crumbled Italian sausage
  • 0.5 cup cooked, diced sweet peppers
  • 4 ounces mozzarella cheese, grated
  • 0.5 cup prepared pizza sauce
  • 0.75 cup freshly grated Parmigiano-Reggiano cheese
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C), then give your muffin pan a generous greasing with 2 teaspoons of oil.
  • On a lightly floured surface, gently roll out the dough to 1/8 inch thickness. Lift the edges to ensure it doesn't stick, then use a cutter to make twelve 4-inch circles. Re-roll the dough as needed to cut out all circles.
  • Gently place each circle in a muffin cup, ensuring it is centered. Press dough up the sides of the cups, leaving a small gap at the top. Once all circles are in place, go around again to press and shape each one.
  • Fill each cup with a layer of 1 tablespoon provolone cheese, 1 tablespoon cooked sausage, and 2 teaspoons cooked peppers. Gently press down on the fillings. Add 1 rounded tablespoon mozzarella cheese and 2 tablespoons pizza sauce on top, pressing the sauce down. Don't worry if the fillings peak above the pan. Generously sprinkle Parmigiano-Reggiano cheese over the cups.
  • Bake in the upper center of the preheated oven until the tops are golden brown, for 30-35 minutes.
  • Allow the muffins to cool in the pan for 10 to 15 minutes. Loosen the edges with a knife and gently remove each muffin using a fork or small spatula.
  • Cool the dish on a rack briefly, then decorate with parsley before serving.
