Authentic Chicago deep dish pizza dough is a uniquely buttery and flaky crust, unlike traditional bread or pizza dough.
Ingredients:
  • 2.25 teaspoons active dry yeast
  • 1.5 teaspoons white sugar
  • 1.125 cups warm water - 110 to 115 degrees F (43 to 45 degrees C)
  • 3 cups all-purpose flour
  • 0.5 cup corn oil
  • 1.5 teaspoons kosher salt
  • butter
Instructions:
  • Combine the yeast and sugar with warm water in a bowl and allow it to sit until the yeast softens and a creamy foam starts to form, which should take about 5 to 10 minutes.
  • Mix the yeast mixture, flour, corn oil, and kosher salt in a large stand mixer with the dough hook until the dough comes together and is slightly sticky, about 2 minutes.
  • Shape the dough into a ball and place it in a buttered bowl. Gently turn the dough to ensure it's coated with butter, then cover the bowl with a towel and allow it to rise in a warm place until doubled in size, approximately 6 hours.
  • After punching down the dough, allow it to rest for 10 to 15 minutes. Then, shape the dough into a 10-inch deep-dish pizza pan before proceeding with your pizza recipe.
