The real pesto

Ingredients:
  • 175g fresh basil leaves
  • 50g pine nuts, lightly toasted
  • 3 garlic cloves
  • 125g grated fresh parmesan
  • 200ml extra virgin olive oil
Instructions:
  • Combine the basil, pine nuts, garlic, and parmesan in a food processor until smooth.
  • Slowly drizzle the oil in a steady stream while processing until a smooth paste forms.
  • Transfer the pesto into an airtight jar and cover with a layer of olive oil. Refrigerate for up to 5 days.
  • Prepare pesto without parmesan, freeze it, then blend it with defrosted pesto before serving.
