Deliciously sweet corn muffins bursting with rich corn flavor, made with both corn kernels and corn meal.
Ingredients:
  • 0.5 cup butter, softened
  • 0.66666668653488 cup white sugar
  • 0.25 cup honey
  • 2 eggs
  • 0.5 teaspoon salt
  • 1.5 cups all-purpose flour
  • 0.75 cup cornmeal
  • 0.5 teaspoon baking powder
  • 0.5 cup milk
  • 0.75 cup frozen corn kernels, thawed
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare 12 muffin cups by greasing or lining them.
  • Combine butter, sugar, honey, eggs, and salt in a large bowl until creamy. Add flour, cornmeal, and baking powder; mix until well blended. Gently fold in milk and corn. Fill muffin cups with batter using a spoon or pour it in carefully.
  • Bake until a toothpick inserted into the center of a muffin comes out clean, about 20-25 minutes in a preheated oven.
