Indulge in warm, buttery cornbread perfection.
Ingredients:
Meltedbutter, for greasing
340g (2 cups) fine polenta (cornmeal)
20.00 gm caster sugar
100g (2/3 cup) plain flour
2.40 gm salt
12.00 gm baking powder
250mls (1 cup) boiling water
250mls (1 cup) buttermilk
125g butter, melted, cooled
2eggs, lightly whisked
Instructions:
Preheat your oven to 180°C and brush a 10 x 20cm loaf pan with melted butter to grease it lightly.
In a large bowl, combine polenta and sugar. Sift in flour, salt, and baking powder, then stir to mix. Add boiling water, buttermilk, melted butter, and eggs. Mix with a wooden spoon until well combined.
Transfer the mixture into a greased loaf pan and level the top. Bake in a preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to rest in the pan for 5 minutes, then transfer it to a wire rack to cool for 15 minutes. Serve the bread warm or at room temperature, sliced and ready to enjoy.
