Lime, chili powder, and cumin seasoned Cornish hens for a flavorful and elegant special occasion roast.
Ingredients:
  • 4 Cornish game hens
  • 2 limes, halved
  • 2 teaspoons olive oil
  • 0.25 teaspoon chili powder
  • 0.25 teaspoon ground cumin
  • kosher salt and ground black pepper to taste
Instructions:
  • Preheat your oven to 425°F (220°C).
  • Massage each hen with the fresh, zesty lime. Drizzle with olive oil, then generously sprinkle with chili powder, cumin, kosher salt, and black pepper. Arrange the hens on a rack in a shallow roasting pan.
  • Roast hens in the oven until golden brown and cooked through, about 15 minutes.
  • Lower the oven temperature to 350°F (175°C).
  • Roast until meat is no longer pink at the bone and juices run clear, approximately 30 minutes. Use an instant-read thermometer to check that the thickest part of the thigh reads 165°F (74°C). Remove from the oven, cover with foil, and let it rest in a warm spot for 10 minutes before slicing.
