Impress your family with savory rice-stuffed baked Cornish hens - a flavorful dinner delight!
Ingredients:
  • 2 tablespoons orange juice
  • 1/3 cup finely chopped onion
  • 3 cups cooked brown or white rice
  • 1/4 cup finely chopped crystallized ginger
  • 3 tablespoons chopped fresh parsley or 1 tablespoon parsley flakes
  • 1 teaspoon chopped fresh or 1/2 teaspoon dried thyme leaves
  • 1 tablespoon orange juice
  • 3 Rock Cornish hens (about 1 1/2 pounds each)
  • 1 to 2 tablespoons orange juice
Instructions:
  • Preheat oven to 350°F. In a 2 1/2-quart saucepan over medium heat, bring 2 tablespoons of orange juice to a boil. Saute onions in the orange juice until crisp-tender. Add rice, ginger, parsley, thyme, and 1 tablespoon of orange juice, stirring well.
  • Stuff each hen with the rice mixture, then place them breast side up in an ungreased 13x9x2 inch baking dish. Brush with 1 to 2 teaspoons of the leftover orange juice. Bake uncovered for 1 hour to 1 hour and 10 minutes, brushing with more orange juice every 30 minutes, until a thermometer reads 180° and the juices run clear when the center of the thigh is cut.
  • Begin by delicately removing the stuffing from the hens. Then, cut the hens in half lengthwise along the backbone and breastbone from tail to neck using kitchen scissors.
