Cornish Game Hens with Garlic and Rosemary

Garlic, lemon, and rosemary roast Cornish hens with white wine sauce - a simple and elegant dish.
Ingredients:
  • 4 Cornish game hens
  • 3 tablespoons olive oil, divided
  • 1 lemon, quartered
  • 8 sprigs fresh rosemary, divided
  • 24 cloves garlic
  • 0.33333334326744 cup white wine
  • 0.33333334326744 cup low-sodium chicken broth
Instructions:
  • Preheat the oven to 450°F (230°C). Massage Cornish hens with olive oil and season with salt and pepper. Fill each cavity with lemon quarters and rosemary sprigs. Arrange hens in a large roasting pan, surrounded by garlic cloves.
  • While the dish is roasting in the preheated oven for 25 minutes, combine wine, chicken broth, and remaining 2 tablespoons olive oil in a small bowl, whisking together.
  • Take the hens out of the oven, lower the oven temperature to 350 degrees F (175 degrees C), then generously pour the wine mixture over the hens. Roast while basting every 10 minutes until the hens turn golden brown and the juices run clear, approximately 25 minutes. Use an instant-read thermometer to ensure the hens reach 165 degrees F (74 degrees C) near the bone.
  • Place the hens on a serving platter, allowing any juices from the cavity to flow into the roasting pan. Remove and discard the lemons and rosemary. Cover the hens with aluminum foil to keep them warm.
  • Pour pan juices and whole garlic cloves into a medium saucepan. Boil until thickened to sauce consistency, approximately 6 minutes.
  • Halve the hens and place two halves on each plate. Drizzle with sauce and roasted garlic, then top with fresh rosemary sprigs before serving.
