Delicious roasted Cornish game hens stuffed with veggies, perfect for a small family. Serve with oven-roasted potatoes.
Ingredients:
  • 2 Cornish game hens
  • 0.5 cup melted butter
  • 0.5 onion, chopped
  • 0.5 stalk celery, chopped
  • 0.25 green bell pepper, chopped
  • 1 (4.5 ounce) can mushrooms, drained and chopped
  • 2 cloves garlic, minced
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon chopped fresh parsley
  • 0.25 cup melted butter
Instructions:
  • Preheat the oven to 325°F (165°C) for the perfect cooking temperature.
  • Combine in a small bowl: 1/2 cup melted butter, onion, celery, bell pepper, mushrooms, garlic, basil, oregano, and parsley.
  • Season the hens generously with salt and pepper, then fill them with an equal combination of butter and vegetables. Arrange the hens in a 9x13 inch baking dish with the breast side facing up, and generously drizzle them with 1/4 cup of melted butter.
  • After covering the dish, let it bake in the preheated oven for 1 1/2 hours. Then, uncover and brown at 500°F (260°C).
