Ingredients:
  • 500 g mixed mushrooms
  • 500 g strong flour plus extra for dusting
  • 250 g unsalted butter (cold)
  • 200 g swede
  • 400 g potatoes
  • 1 onion
  • 1 pinch of dried rosemary
Instructions:
  • Place torn mushrooms in a bowl, sprinkle with 15g sea salt, scrunch together, and let sit for 30 minutes, occasionally scrunching. Meanwhile, combine flour, pinch of salt, and rub in butter. Create a well in the center, gradually add 200ml cold water, mix, and form a dough. Wrap in clingfilm and chill for 1 hour. After 30 minutes, drain excess liquid from mushrooms (should weigh around 400g). Peel swede, potatoes, and onion, and slice into small pieces. Combine with mushrooms, rosemary, and black pepper. Preheat oven to 180°C/350°F/gas 4. Divide pastry into 8, roll out into 20cm rounds. Fill one side with veggie mixture, leaving a gap, brush pastry with egg, fold, seal, and crimp. Brush with egg wash, bake for 40 minutes until golden. Serve with watercress and apple salad and a dollop of English mustard.
