Indulge in a creamy clam chowder with veggies, clams, and a touch of red wine vinegar for extra flavor.
Ingredients:
  • 2 cups cubed potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup minced onion
  • 3 (6.5 ounce) cans minced clams, drained with juice reserved
  • water to cover
  • 0.75 cup butter
  • 0.75 cup all-purpose flour
  • 1 quart half-and-half cream
  • 2 tablespoons red wine vinegar
  • 1.5 teaspoons salt
  • ground black pepper to taste
Instructions:
  • In a large skillet, combine potatoes, carrots, celery, and onion. Pour in clam juice and enough water to cover. Cook over medium-low heat, stirring occasionally, until vegetables are tender.
  • In a large, heavy saucepan over medium heat, melt butter. Whisk in flour until smooth, followed by cream. Stir constantly until thick and smooth. Finally, add the vegetable mixture with any juices and stir until just heated through.
  • Gently fold in clams right before serving to keep them tender. Once clams are warmed, mix in vinegar and season with salt and pepper.
