Hearty kid-friendly chili with beef, sausage, and veggies, packed with bold flavors for cozy winter nights.
Ingredients:
  • 1 green bell pepper
  • 1 pound ground beef sirloin
  • 1 pound ground salsiccia sausage
  • 2 onions, diced
  • 6 cloves garlic, minced
  • 2 (15 ounce) cans chili beans, undrained
  • 1 cup brewed coffee
  • 1 (7 ounce) can diced green chiles
  • 5 tablespoons unsweetened cocoa powder
  • 0.25 cup ground cumin
  • 0.25 cup chili powder
  • 1 (28 ounce) can canned crushed tomatoes
  • 1 cup water, or as needed
  • salt to taste
Instructions:
  • Position oven rack 6 inches below broiler and preheat broiler. Cover baking sheet with aluminum foil.
  • Lay the green bell pepper on the baking sheet.
  • Broil the bell pepper in the oven, turning every 5 minutes, until the skin is blackened and bubbling, for approximately 20 minutes. Place the roasted pepper in a resealable plastic bag, seal it, and let it rest.
  • In a hot Dutch oven, brown the ground beef and sausage until crumbly for 5 to 7 minutes. Drain the grease and transfer the meat to a bowl.
  • In a Dutch oven, warm olive oil over medium-low heat. Sauté onions and garlic in the fragrant oil until the onions turn translucent, about 5 to 10 minutes.
  • Unwrap the roasted pepper, peel off the blackened layer, chop it. Combine chopped bell pepper, ground meat, chili beans, coffee, green chiles, cocoa powder, cumin, and chili powder with the onion mix; stir thoroughly. Simmer for 5 minutes, stirring occasionally until heated through.
  • Combine crushed tomatoes and water into the chili, season with salt, and bring to a boil. Cover the Dutch oven, lower the heat, and simmer for 30 minutes, stirring occasionally. Remove the cover and simmer for another 30 minutes until the chili thickens.
