Upgrade your pancake game with crispy, chewy spring onion pancakes. Let the batter rest for 30 mins for best results. Requires basic pantry ingredients, perfect as a starter or canapé. Serve with Asian sides like green beans with garlic and turmeric or vegetarian fried rice.
Ingredients:
  • 250g (1 2/3 cups) plain flour, plus extra, to dust
  • ½ tsp fine salt
  • 180ml (3/4 cup) warm water
  • Vegetable oil, to shallow-fry
  • Soy sauce, to serve
  • 50g (1/3 cup) plain flour
  • 60g butter, melted
  • 1.80 gm fine salt
  • 10 spring onions (green shallots), halved lengthways, thinly sliced
Instructions:
  • For the dough, combine flour, salt, and water in a large bowl. Use chopsticks or your hands to bring the ingredients together until a shaggy dough forms. Switch to kneading in the bowl for 5 minutes until the dough is smooth. Shape into a ball, place back in the bowl, cover with plastic wrap, and let it rest for 30 minutes.
  • Prepare the filling during the final 5 minutes of resting. Blend the flour, butter, and salt in a small bowl until smooth.
  • Divide the dough into 4 portions and roll each into a 15cm x 26cm rectangle on a floured surface. Spread one-quarter of the filling over each rectangle, leaving a border, and sprinkle each with 2 tbsp spring onion. Roll each rectangle into a rope, then coil and tuck the end under. Flatten gently with a rolling pin to form a round. Repeat with remaining dough, filling, and spring onion.
  • Set a wire rack over a large baking tray. Pour vegetable oil into a large non-stick frying pan, enough to cover the surface. Heat over medium-high heat. Add 1 pancake and shake the pan briefly. Cover and cook for 1 minute. Flip, then cook covered for 1 more minute. Uncover and cook for about 3 minutes, flipping occasionally until crispy and golden on both sides. Transfer to the wire rack and repeat with remaining pancakes. Cut into wedges and serve with soy sauce for dipping. Enjoy!
