Savory twist on buttermilk pancakes: topped with chicken, spring onions, and pepper Jack cheese for a delicious lunch variation.
Ingredients:
  • 1 bunch spring onions, chopped
  • 2 tablespoons chopped sun-dried tomatoes
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 cup buttermilk
  • 2.5 tablespoons milk
  • 2 tablespoons melted butter
  • 1 egg
  • 1 cup shredded pepper Jack cheese
  • 6 slices deli chicken breast
Instructions:
  • Combine spring onions, flour, sun-dried tomatoes, sugar, baking powder, baking soda, and salt in a large bowl.
  • Whisk together buttermilk, milk, melted butter, and egg until smooth.
  • Preheat a lightly oiled griddle over medium-high heat.
  • Combine the buttermilk mixture with the flour mixture, stirring with a wooden spoon or fork until just blended.
  • Ladle a generous 1/2 cup of batter onto the sizzling griddle. Cook until bubbles appear and edges set, around 3 to 4 minutes. Flip and sprinkle with pepper Jack cheese and then place a slice of chicken on top. Continue cooking until the bottom turns golden brown, about 2 to 3 minutes. Flip once more and heat until the chicken is heated through, approximately 30 seconds. Repeat with the rest of the batter.
