Citrus-garlic marinated Cornish game hens, roasted & glazed with savory orange sauce.
Ingredients:
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 lemon, zested and juiced
  • 1 orange, zested and juiced
  • 3 cloves garlic, chopped
  • 1 teaspoon kosher salt
  • freshly ground black pepper to taste
  • 2 Cornish game hens
  • 2 cups orange juice
  • 0.5 cup soy sauce
  • 0.5 cup honey
  • 0.25 cup Dijon mustard
  • 0.25 cup finely diced onion
  • 2 teaspoons ground ginger
Instructions:
  • Combine olive oil, 1 tablespoon Dijon mustard, lemon zest, lemon juice, orange zest, orange juice, garlic, salt, and black pepper in a large resealable bag. Add hens, seal the bag, and coat them with the marinade. Refrigerate for at least 1 hour, flipping the bag occasionally to ensure even marination.
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Combine orange juice, soy sauce, honey, 1/4 cup Dijon mustard, onion, ginger, and black pepper in a bowl and mix well.
  • Transfer the marinated hens to a roasting pan, leaving the excess marinade behind.
  • Roast hens in the preheated oven for 50 minutes, then brush with orange glaze and roast for an additional 5 minutes. Flip hens, brush with more glaze, and continue roasting until meat is cooked through, about 5 minutes more, reaching 165°F (74°C) with an instant-read thermometer.
