Skillet-seared asparagus with a flavorful glaze, perfect pairing with Cornish hens.
Ingredients:
  • 3 bunches medium-thick asparagus, tough ends snapped off
  • 2 tablespoons extra-virgin olive oil
  • 0.5 cup orange juice
  • 2 tablespoons Zest of a large orange
Instructions:
  • Season asparagus with a hint of salt, then gracefully place it in a generously sized (12-inch) skillet. Drizzle with oil and a splash of juice, cover the skillet, and let it rest. The asparagus can be prepared in advance if desired.
  • Preheat the burner on high about 10 minutes before serving. Once the asparagus starts steaming, cook for 4 minutes until tender, then test for doneness with a sharp knife tip.
  • Place the cooked asparagus on a serving dish. Optionally, sprinkle some zest into the skillet and cook until the pan juices thicken into a glaze, around 2-3 minutes more. Drizzle this glaze over the asparagus and serve.
