Grilled Cornish Hens with Tomato-Orange Sauce

Elegant basil game hens with a delicious sweet-savory sauce.
Ingredients:
  • Vegetable oil
  • 4 Rock Cornish hens (about 1 1/2 lb each)
  • 2 tablespoons basil-flavored or regular olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup orange marmalade spreadable fruit
  • 1/2 cup orange juice
  • 1/8 teaspoon pepper
  • 2 cups Muir Glen™ organic diced tomatoes (from 28-oz can), drained
  • 1/4 cup thinly sliced fresh or 1 tablespoon dried basil leaves
Instructions:
  • Prepare the grill by brushing the rack with vegetable oil and heating coals or gas for direct heat. Using kitchen scissors, halve each hen along the backbone from tail to neck.
  • Brush the hen halves with aromatic basil-infused oil, then season with a perfect touch of salt and pepper. Securely place the barbecue meat thermometer in the thickest part of the inner thigh muscle without touching the bone.
  • Grill the hen halves skin side down over medium heat for 30 to 40 minutes. Brush with basil-flavored oil, flip once, and cook until the juice runs clear when thickest pieces are cut to the bone (165°F). Allow the hens to rest, covered, for about 15 minutes before serving.
  • While the hens are grilling, prepare the sauce. In a 1-quart saucepan, bring all sauce ingredients (except basil) to a boil; then simmer uncovered for about 25 minutes until the sauce slightly thickens. Add the basil and continue to simmer for 5 more minutes. Serve the sauce warm with the hens.
