Marinate Cornish game hens for 4 hours for flavorful, juicy grilled birds - perfect for summer feasts.
Ingredients:
  • 1 cup lemon juice
  • 0.5 cup olive oil
  • 0.5 medium onion, chopped
  • 2 cloves garlic, peeled and chopped
  • 1 tablespoon white wine
  • 1 tablespoon pepper
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot pepper sauce
  • 1 teaspoon celery salt
  • 4 (1 1/2 pound) Cornish game hens
Instructions:
  • Combine lemon juice, oil, onion, garlic, wine, pepper, Worcestershire sauce, hot pepper sauce, celery salt, and salt in a large glass or ceramic bowl. Mix well. Add game hens and coat them evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for a minimum of 4 hours.
  • Prepare the outdoor grill by preheating it to medium heat and lightly oiling the grate.
  • Take out the hens from the marinade and gently shake off any extra marinade. Remember to set aside the remaining marinade for basting later.
  • Grill hens, basting with marinade, until fully cooked and thermometer reads 165°F (74°C) in the thickest part of the thigh near the bone, about 1 hour. Dispose of any extra marinade.
