Cornish Hens with Apple-Raisin Stuffing

Quick and easy festive feast for a group of eight.
Ingredients:
  • 3 tablespoons butter or margarine
  • 1/2 cup chopped green onions (8 medium)
  • 1 red baking apple, unpeeled, chopped
  • 4 cups unseasoned dry bread cubes
  • 1/2 cup raisins
  • 1/4 teaspoon ground allspice
  • 1/4 cup apple juice
  • 4 Cornish game hens (24 oz each), thawed if frozen
  • 1/8 teaspoon pepper
  • 1/4 cup apple jelly
  • 2 tablespoons butter or margarine
Instructions:
  • Preheat oven to 350°F. Melt 3 tablespoons of butter in a 10-inch skillet over medium-high heat. Sauté onions and apple until tender. Mix in the rest of the stuffing ingredients. Spread the stuffing in a 15x10x1-inch pan without greasing.
  • Cut each game hen in half. Season with a light sprinkle of salt and pepper. Arrange the hen halves, skin side up, on top of the stuffing. In a small saucepan, melt jelly with 2 tablespoons of butter over low heat; brush the mixture over the hens.
  • Roast the hens in the oven, uncovered, for 1 to 1 1/4 hours, or until they are fork-tender and the juices run clear when the thickest pieces are cut to the bone (reaching at least 165°F).
