Cornmeal Flapjacks

Energize your morning with hearty flapjacks for lasting energy.
Ingredients:
  • 1 cup cornmeal
  • 3/4 cup whole grain pastry flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 1 tablespoon canola or soybean oil
  • 2 tablespoons maple syrup
  • 1 egg
  • 3 cups berries such as blueberries, raspberries and blackberries
Instructions:
  • Preheat oven to 200° F and generously coat a baking sheet with cooking spray.
  • Mix together cornmeal, flour, baking soda, and salt in a large bowl.
  • Combine the buttermilk, oil, maple syrup, and egg in a medium bowl. Then, pour this mixture into the flour mixture and gently stir until just blended.
  • Spray a large skillet with cooking spray and heat over medium heat. Pour batter in 1/4 cup portions into the skillet. Cook for about 2 minutes until small bubbles form on the surface and edges look dry. Flip and cook for another 2 minutes until golden brown. Transfer flapjacks to a baking sheet and keep warm in the oven.
  • Spray skillet again with cooking spray and continue cooking remaining batter to yield 18 flapjacks. Serve flapjacks with fresh berries.
