Cornmeal Sugar Cookies

Unique crispy sugar cookie, versatile as cut-out or refrigerator style. Irresistible dipped in melted chocolate.
Ingredients:
  • 1 cup butter, softened
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 1 teaspoon orange zest
  • 1 cup cornmeal
  • 0.5 teaspoon salt
  • 0.33333298563957 cup granulated sugar for decoration
  • 0.25 teaspoon ground nutmeg
Instructions:
  • In a medium bowl, beat sugar and butter until light and fluffy. Mix in egg yolks, vanilla, orange extract, and orange zest until well combined. Sift together flour, cornmeal, and salt, then gently fold into the creamed mixture. Chill dough until firm. To make refrigerator cookies, shape dough into logs before chilling.
  • Preheat oven to 350°F (175°C) for the perfect baking temperature.
  • Roll out the cookie dough to a 1/4-inch thickness and cut out cookies with a cookie cutter. Place them on ungreased cookie sheets. For refrigerator cookies, slice logs into 1/4-inch slices. Sprinkle the cookies with sugar and ground nutmeg before baking in a preheated oven for 8 to 10 minutes until the edges turn golden brown. Once baked, remove the cookies from the pan and let them cool on a wire rack.
