Create a comforting cottage pie with a flavorful sweet potato topping for a satisfying family dinner.
Ingredients:
  • 13.80 gm olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stick, finely chopped
  • 1 garlic clove, crushed
  • 500g 3 star beef mince
  • 400g rich and thick chopped tomatoes
  • 125ml beef stock
  • 1 tsp fresh thyme leaves
  • 60g pea
  • 750g sweet potato, peeled, coarsely chopped
  • 40g butter, chopped
  • 80ml milk
  • 60g tasty cheese
  • Thyme leaves, extra
Instructions:
  • Preheat your oven to 180C. Heat oil in a large heavy-based saucepan over medium-low heat. Sauté onion, carrot, and celery until softened, about 5 minutes. Add garlic and cook for 1 minute. Stir in the mince and cook for 5 minutes to brown and break up any lumps. Pour in tomato, stock, Worcestershire sauce, and thyme and bring to a boil. Reduce heat and simmer for 25-30 minutes until thickened. Remove from heat, add peas, and season with salt and pepper before serving.
  • Cook the sweet potato in a pot of boiling salted water until tender. Drain and mash the sweet potato, then mix in butter, milk, and cheese until well combined. Season with salt and pepper.
  • Evenly distribute the mince mixture among 4 ovenproof dishes. Cover with a layer of sweet potato mash. Bake on a tray for 25 mins until the mash is golden and the filling is heated through. Finish with a sprinkle of fresh thyme leaves before serving.
