Layer thinly sliced potatoes with chicken stock and cheese for a visually stunning and delicious side dish that is sure to impress your guests.
Ingredients:
  • 1.5kg desiree potatoes, peeled
  • 120g (1 1/2 cups) pre-grated cheddar
  • 4 garlic cloves, thinly sliced
  • 25g butter, finely chopped
  • 185ml (3/4 cup) Salt Reduced Chicken Style Liquid Stock
Instructions:
  • Preheat your oven to 200C/180C fan forced. Line a 6cm-deep, 22 x 11cm loaf pan with baking paper, leaving an overhang on the long sides.
  • Thinly slice the potatoes using a mandoline or sharp knife. Line the base and sides of the pan with the potato slices, slightly overlapping to form the outer "shell" in a single layer. Sprinkle 1/2 cup (40g) of cheese over the potatoes and set aside the same amount for the top layer.
  • Layer the cheese with 2 layers of potato, slightly overlapping. Sprinkle a bit of cheese, garlic, and butter on top. Drizzle with some stock. Repeat the layering process with cheese, remaining potato, garlic, butter, and stock, seasoning each layer and ending with potato. Finish by sprinkling the reserved 40g (1/2 cup) cheese on top.
  • Fold the excess baking paper tightly over the dish. Cover securely with foil and bake for 1 hour, or until the potato is just tender. Uncover and bake for an additional 30 minutes, or until golden brown. Allow to cool slightly for 20 minutes before serving.
  • Transfer the potato bake onto a stylish serving board, and then slice it into mouthwatering thick pieces for a beautiful presentation.
