Country French White Beans

Slow-cooked French-style beans - a flavorful, perfect dinner side.
Ingredients:
  • 2 cups dried great northern beans, sorted and rinsed
  • 1 large onion, chopped (1 cup)
  • 2 cloves garlic, finely chopped
  • 2 cups water
  • 1 tablespoon dried herbes de Provence
  • 3 tablespoons olive or vegetable oil
  • 2 teaspoons salt
  • 1/2 cup chopped drained roasted red bell peppers (from 7-ounce jar)
Instructions:
  • Place the beans in a large bowl and cover with water, ensuring the water level is about 2 inches above the beans. Allow them to soak overnight, for a minimum of 10 hours.
  • Drain the beans and combine them with all the remaining ingredients, except the bell peppers, in a 3 1/2- to 4-quart slow cooker.
  • Cook on high heat for 3.5 to 5 hours until beans are tender, covering the pot.
  • Fold vibrant bell peppers into the flavorful beans in the cooker.
