Flavorful European country bread with a hint of whole wheat for a light and delicious texture.
Ingredients:
  • 0.5 teaspoon active dry yeast
  • 1 cup warm water
  • 1.5 cups bread flour
  • 2 teaspoons active dry yeast
  • 2 cups warm water
  • 1 cup whole wheat flour
  • 4.5 cups bread flour, divided
  • 2 teaspoons salt
Instructions:
  • The evening prior, create starter: Combine 1/2 teaspoon active dry yeast with 1 cup of warm water in a medium non-metal bowl. Mix in 1 1/2 cups bread flour thoroughly. Cover and rest overnight at room temperature.
  • The next day, in a large bowl, combine 2 teaspoons active dry yeast with 2 cups warm water until dissolved. Stir in the starter mixture, whole wheat flour, 3 cups bread flour, and salt until fully mixed. Gradually add the remaining bread flour, 1/2 cup at a time, ensuring thorough incorporation after each addition. Once the dough comes together, transfer it to a lightly floured surface and knead for about 8 minutes until it's smooth and elastic.
  • Oil a large bowl, add the dough and swirl it around to coat in oil. Cover with a damp cloth and let it rise in a warm spot until doubled in size, about 1 hour.
  • Preheat the oven to 425°F (220°C) and generously grease two 9x5-inch loaf pans.
  • Gently press down on the dough and transfer it to a floured surface. Divide the dough into 2 equal portions and shape them into loaves. Put the loaves in the pans. Cover with a damp cloth and allow to rise until doubled, around 45 minutes.
  • Bake until the top is beautifully golden and the bottom of the loaf sounds hollow when tapped, around 30 minutes.
