Mouthwatering Middle Eastern couscous and bean burger, topped with creamy hummus, refreshing yogurt, and fragrant mint - a must-try for all food lovers, not just vegetarians!
Ingredients:
  • 80ml vegetable stock
  • 100g couscous
  • 36.40 gm olive oil
  • 1 onion, finely chopped
  • 400g can cannellini beans, rinsed, drained
  • 20.00 ml harissa paste (see note)
  • 40.00 ml chopped mint
  • 2 tsp finely grated lemon zest
  • Loaf of Turkish bread, split, cut into 4
  • Hummus, to serve
  • Lettuce, to serve
  • Tomato, to serve
  • Natural yoghurt, to serve
  • Mint leaves, to serve
Instructions:
  • First, bring the stock to a boil. Then, pour the hot stock over the couscous in a heatproof bowl. Give it a good stir, cover the bowl, and let it sit for 5 minutes.
  • In a frypan over medium heat, warm 2 teaspoons of oil. Sauté onion for 2-3 minutes until softened. Stir in garlic and cook for an additional 1 minute until aromatic. Transfer the mixture to a food processor along with the beans, harissa paste, mint, zest, and cooked couscous. Pulse until combined. Season with salt and pepper. Shape the mixture into 4 patties and refrigerate for 10 minutes before cooking.
  • In a frypan over medium heat, heat the remaining 1 1/2 tablespoons oil and cook patties for 2 minutes on each side until crispy. Spread hummus on half of the bread slices. Layer with lettuce, tomato, patties, yogurt, mint, and the remaining bread slices.
