Succulent braised chicken breasts stuffed with feta, lemon, and oregano, cooked with spinach and tomatoes for a flavorful meal perfect for any occasion.
Ingredients:
  • 2 tablespoons all-purpose flour, divided
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 pound feta cheese, crumbled
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 6 boneless, skinless chicken breast halves
  • 1.5 cups water
  • 1 cube chicken bouillon, crumbled
  • 2 cups loosely packed torn fresh spinach leaves
  • 1 ripe tomato, chopped
Instructions:
  • Combine 1 tablespoon of flour, salt, and pepper on a large plate. Set aside. In a separate small bowl, mix cheese, lemon juice, and oregano. Set aside.
  • Tenderize each chicken breast to 1/2 inch thickness using a meat mallet. Then, spread the cheese mixture on each breast, leaving a small border. Fold the chicken breasts in half and secure with toothpicks. Finally, coat the chicken breasts with the flour mixture.
  • Heat oil in a large skillet over medium heat. Sear chicken breasts until golden on both sides. Whisk together water, chicken bouillon, and flour in a small bowl, then pour over chicken. Add spinach and tomato to the skillet, bring to a boil, then cover and simmer on low for 8-10 minutes until the chicken is cooked through. Remove toothpicks before serving.
