Cauliflower cheese pots

Indulge in the sophisticated and creamy cousin of broccoli, the cauliflower.
Ingredients:
  • Melted butter, to grease
  • 1 (about 600g) cauliflower, cut into florets
  • 30g butter
  • 40.00 ml plain flour
  • 500ml (2 cups) milk
  • 40g (1/2 cup) finely grated parmesan
  • 2 tsp chopped fresh thyme
  • Pinch of white pepper
  • 40g (1/2 cup) coarsely grated cheddar
Instructions:
  • 1. Grease six 250ml (1-cup) capacity ovenproof ramekins with melted butter. 2. Boil cauliflower in salted water for 5 minutes until tender. 3. Drain and distribute evenly among the ramekins.
  • In a small saucepan over medium heat, melt the butter until it foams. Stir in the flour and cook for 2 minutes until the mixture bubbles. Take it off the heat. Slowly whisk in the milk until smooth. Return to medium-high heat. Cook for 5 minutes until the sauce boils and thickens. Remove from heat and stir in the parmesan, thyme, salt, and white pepper.
  • 1. Preheat the grill on high. 2. Drizzle the sauce over the cauliflower. 3. Sprinkle with cheddar. 4. Grill the cauliflower about 10cm from the heat source for about 5 minutes until golden. 5. Allow it to rest for 3 minutes. 6. Serve and enjoy!
