Cauliflower cheese fritters

Kid-friendly cheesy cauliflower fritters.
Ingredients:
  • 125.00 ml plain flour
  • 2.00 gm baking powder
  • 82.50 gm water
  • 250g cauliflower, cut into thick slices
  • 125.00 ml vegetarian hard cheese, or parmesan, finely grated
  • 40.00 ml fresh flat-leaf parsley
  • Light olive oil, to fry
  • Fresh basil leaves, to serve
  • Pesto, to serve
Instructions:
  • Cut the cauliflower into thick slices, then boil in a saucepan of water for 8 minutes until tender. Drain well.
  • Combine fluffed flour and baking powder, create a hollow in the middle, and introduce the egg. Slowly pour in water while whisking until a silky batter forms. Mix in grated cheese and fresh parsley.
  • Coat cauliflower in batter, gently shaking off any extra.
  • Fill a medium saucepan with light olive oil, making sure it reaches one-third of the way up the side. Heat over high heat until it reaches 170C. Cook the items in the oil in 3 batches for 2 minutes on each side or until golden. Finish by topping with fresh basil leaves and serve alongside sun-dried tomato or basil pesto.
