Delicious cauliflower feta fritters, great for any meal.
Ingredients:
  • 75.00 gm self-raising flour
  • 130.00 gm buttermilk
  • 1 egg
  • 20.00 ml chopped mint
  • 250g cauliflower florets, blanched
  • 200g Brand Australian style feta, grated
  • 36.80 gm Brand vegetable oil
  • 100g baby rocket
  • 18.20 gm extra virgin olive oil
  • 165.00 ml tomato relish, to serve
  • Lemon wedges, to serve
Instructions:
  • In a bowl, mix together flour, buttermilk, egg, and fresh mint until well combined. Fold in cauliflower and crumbled feta, then season to taste.
  • In a large non-stick frying pan over medium heat, fry 1/3 cupfuls of cauliflower mixture in batches in hot vegetable oil for 2-3 mins on each side until golden and cooked through. Place on paper towel to drain.
  • Combine fresh arugula and high-quality extra virgin olive oil in a bowl. Serve the fritters alongside a refreshing arugula salad, flavorful tomato relish, and zesty lemon wedges.
