Cauliflower fritters

Kids will devour these delicious cheesy cauliflower fritters, making veggies irresistible.
Ingredients:
  • 850g cauliflower, trimmed, cut into florets
  • 300.00 gm self-raising flour
  • 62.50 ml flat-leaf parsley leaves, chopped
  • 250.00 ml grated parmesan cheese
  • 2 eggs, lightly beaten
  • olive oil, for shallow-frying
  • fruit chutney, to serve
Instructions:
  • Preheat oven to 150°C. Boil salted water in a saucepan. Add cauliflower and cook for 4 to 6 minutes until tender. Drain, chop roughly, and let cool in a bowl.
  • Sprinkle flour over the chilled cauliflower, then mix in garlic, parsley, and parmesan. Incorporate everything with a thorough stir. Drizzle in the egg and mix until fully blended. Gradually incorporate 1/4 cup of water while stirring until a thick batter forms.
  • Add oil to large non-stick frying pan to cover the base. Heat over medium heat until hot. Spoon 1/4 cup of mixture per fritter into the oil, cooking 5 at a time. Cook for 4 to 5 minutes each side until golden and cooked through. Transfer to a wire rack and keep warm in oven while cooking the remaining fritters.
  • Enjoy fritters warm or chilled, accompanied by chutney.
