Spicy cauliflower fritters

Delicious vegetarian fritters perfect as a spicy appetizer or a flavorful side dish.
Ingredients:
  • 1 large (about 500g) cauliflower half, trimmed
  • 75g plain flour
  • 2.50 gm ground cumin
  • 1 tsp ground turmeric
  • 1 tsp grated fresh ginger
  • 1 egg, lightly beaten
  • 20g shredded coconut
  • 36.80 gm vegetable oil
  • Coriander sprigs, to serve
  • Natural yoghurt, to serve
  • Steamed Basmati rice, to serve
Instructions:
  • Grate the cauliflower and combine it with flour, cumin, turmeric, ginger, and egg in a large bowl. Mix until evenly combined. Shape the mixture into 8 equal portions, forming them into 8cm round fritters.
  • Toast the coconut in a large frying pan over medium heat, tossing frequently, until light golden brown, about 3-4 minutes. Set aside.
  • 1. Heat oil in a frying pan until shimmering. 2. Cook half of the fritters for 3 minutes on each side until golden brown. 3. Repeat with the rest of the fritters. 4. Sprinkle toasted coconut and coriander sprigs on top of the fritters. 5. Serve with a dollop of yogurt and rice.
