Spicy Indian cauliflower fritters with mint garlic yogurt dip - the ultimate crowd-pleaser for your next feast!
Ingredients:
  • 250.00 ml plain yoghurt
  • 40.00 ml chopped mint, plus extra leaves to serve
  • 1 small garlic clove, crushed
  • vegetable oil, to deep-fry
  • 49.50 gm self-raising flour
  • 32.50 gm cornflour
  • 1/2 tsp chilli powder
  • 1/2 tsp garam masala
  • 1/4 tsp ground turmeric
  • 165.00 ml soda water, chilled
  • 1/2 large cauliflower
Instructions:
  • In a small bowl, mix together the yoghurt, fresh mint, and minced garlic. Season with a pinch of salt. In a large saucepan, heat oil over medium-high heat until it reaches 180C. To test if the oil is ready, drop a small piece of bread in; it should turn golden brown in about 15 seconds.
  • In a large bowl, sift together the flour, cornflour, chilli powder, garam masala, and turmeric. Slowly pour in the soda water while gently whisking to blend everything together.
  • Cut the cauliflower into evenly sized florets. Place them in the batter and ensure they are fully coated.
  • Using tongs, carefully transfer a quarter of the cauliflower to the hot oil and fry for 1 1/2 minutes until crispy and golden brown. Remove with a slotted spoon and place on a paper towel-lined plate. Repeat this process with the remaining cauliflower in three more batches. Season with salt, garnish with extra mint leaves, and serve with the yogurt dipping sauce.
