Spicy cauliflower fritters: a sophisticated starter for any occasion.
Ingredients:
  • 150g (1 cup) plain flour
  • 3.75 gm ground cumin
  • 1 1/2 tsp ground coriander
  • 4.00 gm baking powder
  • 1/2 tsp ground turmeric
  • 250g (1 cup) natural yoghurt
  • 82.50 ml chopped fresh coriander leaves
  • Vegetable oil, for shallow-frying
  • 1/2 small (about 350g) cauliflower, cut into small florets
  • 42.00 gm fresh lemon juice
Instructions:
  • In a large mixing bowl, sift together the flour, cumin, ground coriander, baking powder, and turmeric. In a small bowl, whisk together the yoghurt and eggs. Add the yoghurt mixture and 2 tablespoons of coriander leaves to the dry ingredients. Whisk until fully combined.
  • In a large wok, heat about 5cm of oil over medium heat until hot. Dip 4 florets into batter and carefully add to the hot oil. Cook for 2-3 minutes, turning twice, until golden. Using a slotted spoon, transfer the florets to a plate lined with paper towel. Repeat the process with the remaining florets and batter.
  • Portion into individual serving bowls. Garnish with the rest of the fresh coriander and generously drizzle with fresh lemon juice. Serve promptly.
