Flavor-packed layered black bean dip.
Ingredients:
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed
  • 1 can (4 ounces) chopped ripe olive, drained
  • Small onion, finely chopped (1/4 cup)
  • 1 garlic clove, finely chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons lime juice
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon pepper
  • 1 package (8 ounces) cream cheese, softened
  • 2 hard-cooked eggs, chopped
  • 1 green onion, sliced
  • 1 package (15 ounces) tortilla chips
Instructions:
  • Combine all ingredients, excluding cream cheese, eggs, onion, and chips. Chill in the refrigerator for a minimum of 2 hours.
  • Smooth a layer of creamy cream cheese on the serving plate. Evenly dollop the bean mixture on top of the cream cheese.
  • Place the eggs on top of the bean mixture in a circular pattern along the edge of the plate, then generously sprinkle with chopped onions. Serve alongside crispy tortilla chips.
