Cowboy caviar: A zesty blend of pinto beans, black-eyed peas, corn, bell pepper, and tangy dressing for a tasty salad or dip.
Ingredients:
  • 0.5 cup olive oil
  • 0.5 cup vegetable oil
  • 0.5 cup cider vinegar
  • 0.5 cup white sugar
  • 1 (14 ounce) can pinto beans, rinsed and drained
  • 1 (14 ounce) can black-eyed peas, rinsed and drained
  • 1 (11 ounce) can white shoepeg corn, drained
  • 1 red onion, chopped
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 0.5 cup chopped cilantro
Instructions:
  • In a saucepan, mix olive oil, vegetable oil, cider vinegar, and sugar. Bring to a boil, then cool to room temperature after removing from the heat.
  • Combine pinto beans, black-eyed peas, corn, onion, celery, red bell pepper, and cilantro in a large bowl. Drizzle the cooled oil mixture over the beans and toss to evenly coat. Enjoy chilled.
