Betty Crocker's Heart Healthy Cookbook offers a delightful, nutritious dessert for you to indulge in.
Ingredients:
  • 1 cup sugar
  • 1 3/4 cups fat-free (skim) milk
  • 1 cup fat-free cholesterol-free egg product or 8 egg whites
  • 1 teaspoon vanilla
  • 2 cups raspberries, blackberries, blueberries or sliced strawberries
Instructions:
  • Preheat oven to 325°F. In a medium nonstick skillet over medium heat, melt 1/2 cup of sugar for 7 to 10 minutes, stirring frequently until it turns into a light caramel color. Be cautious as the mixture will be very hot. Pour the caramel into an 8x1 1/2 inch round pan, tilt to coat the bottom, and let it cool on a wire rack.
  • In a large bowl, combine the remaining 1/2 cup of sugar, milk, egg product, salt, and vanilla. Pour this mixture over the sugar mixture in a 13x9x2 inch rectangular pan. Place the pan in a larger rectangular pan. Fill the larger pan with very hot water to within 1/2 inch of the top of the round pan.
  • Bake for 50 to 60 minutes, or until a knife inserted in the center comes out clean. Once done, remove the round pan from the water bath, cover, and refrigerate for at least 3 hours or overnight until thoroughly chilled. To unmold, gently run a knife around the edge of the custard and invert it onto a serving platter. Finish by topping with fruit.
