Decadent gluten-free creme caramel is sure to impress all dessert lovers.
Ingredients:
  • 268.75 gm caster sugar
  • 300ml Thickened Cream
  • 386.25 gm milk
  • 4.40 gm vanilla extract
  • 6 eggs
Instructions:
  • Preheat the oven to 170°C/150°C fan-forced. In a saucepan over low heat, mix together 3/4 cup of sugar and 1 cup of cold water. Stir and cook for 5 minutes until the sugar dissolves. Increase the heat to high and bring it to a boil. Let it boil without stirring for 5 to 7 minutes until it turns golden. Remove from heat and let it sit for 2 minutes to settle. Pour the caramel into six 1 cup-capacity ovenproof dishes and let it set.
  • In a saucepan over medium heat, blend together cream, milk, and vanilla until small bubbles form at the edge of the pan, about 6 to 8 minutes. Remove from heat.
  • In a bowl, whisk the eggs and remaining sugar until they are pale and creamy. Gradually pour in the cream mixture while whisking continuously. Then, strain the mixture into a jug and distribute it evenly among the dishes.
  • Place the dishes in a large baking dish and fill with boiling water halfway up the sides of the smaller dishes. Bake for 30 minutes or until just set. Remove the baking dish from the oven and take the dishes out of the water. Let them cool, then refrigerate overnight. Run a thin knife around the edge of each dish, flip onto 1cm-deep plates, and serve.
