Oatmeal-crusted chickpea patties with crab salad - a delightful meal or appetizer.
Ingredients:
  • 2 (15 ounce) cans chickpeas (garbanzo beans), drained and rinsed
  • 0.5 cup chopped fresh parsley, divided
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.25 teaspoon dried thyme
  • 1.5 cups quick-cooking oats, divided
  • 0.75 cup bread crumbs, divided
  • 0.25 cup grapeseed oil
  • 2 (6 ounce) cans crab meat, drained
  • 0.25 cup mayonnaise
  • 1 tablespoon celery seed
  • 1.5 teaspoons white sugar
  • 0.5 teaspoon paprika
  • 1 large head romaine lettuce heart, shredded
Instructions:
  • Create a smooth paste by blending chickpeas. Transfer the paste to a bowl and combine with onion, 1/4 cup parsley, eggs, salt, black pepper, and thyme. Fold in half of the oats and half of the bread crumbs.
  • Spread the oats and bread crumbs on a plate in an even layer.
  • Shape the chickpea mixture into patties and coat them thoroughly with the oat-bread crumb mixture.
  • In a large skillet over medium heat, fry patties in oil until golden brown on each side, about 3 to 4 minutes per side.
  • Combine crab meat, creamy mayonnaise, aromatic celery seed, a touch of sugar, and flavorful paprika in a bowl, gently tossing until the ingredients meld together into a harmonious crab salad.
  • On a serving plate, arrange a bed of fresh lettuce. Place the chickpea patties on top, then generously spoon flavorful crab salad over each patty.
