Whip up herb and veggie roll-ups with creamy spread on cracker bread for a quick and tasty appetizer!
Ingredients:
  • 1 soft cracker bread (16 inch), room temperature
  • 4 oz reduced-fat cream cheese (Neufchâtel) (from 8-oz package), softened
  • 1 tablespoon chopped fresh basil or 1 teaspoon dried basil leaves
  • 1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano leaves
  • 4 oz thinly sliced cooked ham
  • 12 large spinach leaves, stems removed
  • 1/2 medium red bell pepper, cut into thin bite-size strips
Instructions:
  • Halve the cracker bread crosswise. Combine cream cheese, basil, and oregano in a small bowl. Spread half of the mixture on one cracker bread half, leaving a 1/4-inch border.
  • Layer half of the ham slices over the creamy spread, leaving a 1-inch border. Add 6 fresh spinach leaves on top. Then, create rows of bell pepper strips starting 1-inch away from the straight edge.
  • Begin by rolling up the mixture tightly using a straight edge. Wrap the roll securely in plastic wrap. Repeat this process with the remaining ingredients to create a second roll.
  • Chill rolls until firm for 20 minutes, then slice into 1-inch-thick pieces.
